I could eat an entire batch of these. The crunchy, buttery graham cracker crust is my favorite part, but I definitely don't hate the gooey coconut-walnut-white chocolate-dark chocolate topping, either. These are incredibly easy (and fun) to make, and add a little something different to the traditional holiday cookie repertoire. My only warning: do NOT attempt to crush the graham crackers by hand. Either grind them up using a food processor or buy already crushed crackers. I made this mistake last night and, although the bars tasted fantastic, the uneven chunks of graham cracker didn't solidify into a crust, and I wound up with something closer to sticky, mushy cookie balls than pretty, serve-able cookie bars. Somehow, though, no one seemed to mind...
Ingredients:
1 1/2 cups graham cracker crumbs
1/2 cup butter
1 14 oz can sweetened condensed milk
1 1/2 cups sweetened shredded coconut
3/4 cup chopped walnuts or pecans
1 cup semisweet chocolate chips
1 cup white chocolate chips
Directions:
Preheat oven to 325 (if a non-glass dish, 350)
Melt butter in microwave, and spread over the bottom of a 9x13 inch glass dish
Sprinkle crumbs over butter, and pour milk evenly over crumbs
Top with coconut, nuts, and chocolate chips
Press down well with a spoon
Bake 25-30 minutes, or until golden brown
Cool completely, then cut into bars and serve
About 30 bars
