Balsamic Chicken TBM

This is a great weeknight meal that'll take you just minutes to toss together. Even better, you've likely got all of the ingredients in your fridge already. If you can, make the tomato, onion and basil mixture the night before or in the morning - the longer it marinates, the more flavorful it'll be. Though I used mozzarella (which was delicious), this would also be great with feta. And, if you have leftovers, save the tomato mixture - it's great on bread (think bruschetta), and will keep for a few days.


Ingredients:
2 5-6 oz boneless, skinless chicken breasts, pounded thin
4-5 tbsp red onion, diced
2 tbsp good balsamic vinegar
2 tsp olive oil
2 small tomatoes, diced
2 tbsp fresh basil, chopped
2-4 oz mozzarella or feta, cubed/crumbled
1 garlic clove, crushed
salt and pepper

Directions:
Combine diced onion, balsamic, olive oil, salt and pepper, and let sit at least 10 minutes
Add in tomato, cheese, garlic and basil, and again, let sit at least 10 minutes or up to 24 hours
Season chicken with salt and pepper and saute until done
Spoon tomato mixture on top of chicken and serve
*I like to sprinkle a bit more balsamic on top, just for a little more moisture - but again, very important to use a good, well-aged balsamic!
