One of my weeknight staples, because I often already have all of the ingredients at home and the recipe takes less than 15 minutes start to finish. It's ridiculously easy but packed with flavor, and can be easily varied: if you don't like tomatoes, try spinach or diced zucchini, and if you don't have a grill or grill pan, saute!
Ingredients:
2 boneless, skinless chicken breasts
1 tsp olive oil
Salt and pepper
2 tbsp balsamic vinegar
2 tbsp honey
3/4 cup halved grape tomatoes
Directions:
Season chicken with olive oil, salt and pepper
Grease grill/grill pan, and grill chicken - about 5 minutes/side
Set aside
In small pan, add balsamic and honey
Cook over medium-low heat for about 2 minutes, or until thickened
Pour over chicken
In same pan, add halved tomatoes
Saute 2-3 minutes, until slightly shriveled and browned
Top chicken with tomatoes and serve
Serves 2
