A classic summer salad: zucchini, yellow squash, grape tomatoes, and a bunch of fresh herbs drizzled with olive oil and a splash of balsamic vinegar. Very easy but be sure to go light on the oil - the juices from the grilled squash and sliced tomato create a sweet, full-flavored dressing all by themselves. I like to serve this immediately, but the salad can be refrigerated for up to week and is also great served cold.
Ingredients:
1 medium zucchini, sliced 1/4" thick
1 medium yellow squash, sliced 1/4" thick
3/4 cup sliced grape tomatoes, halved
Extra virgin olive oil
1 tbsp balsamic vinegar
2 tbsp chopped fresh herbs (I like basil and oregano)
Salt and pepper
1 tbsp Parmesan cheese (optional)
Directions:
Slice zucchini, squash and tomatoes
Drizzle with olive oil, and season with salt and pepper
Arrange on grill and cook for about 5 minutes, flipping at least once
Dice zucchini and squash
Toss with balsamic and herbs
If desired, sprinkle with cheese
