So summery! This fresh and easy salad makes for the perfect side dish. I didn't need it, but depending on the ripeness of the tomatoes, a pinch of sugar can make a big difference. And make sure to season liberally with salt and pepper. The longer this salad sits in the fridge, the better it gets!
Ingredients:
2 cucumbers, diced
(I used baby cucumbers - up to you!)
2 plum tomatoes, diced
1/4 cup red onion, diced
2 tbsp lemon juice
salt & pepper
optional: 1/2 tsp sugar
Directions:
Dice vegetables and toss with lemon juice
Season well with salt and pepper
Let sit in fridge for at least 30 minutes before serving
