Lemon Cinnamon Cookies

Lemon/cinnamon sounds like a weird combination, I agree. But these are phenomenal. Most people don't even recognize the lemon flavor (overwhelmed as they are by the tangy, sweet, surprisingly and fantastically rich flavor of these cookies). The original recipe comes from Sweden. These cookies take only about 20 minutes, and require only 7 ingredients and no mixer. They're wonderful served with tea, or with a big glass of milk.

Ingredients:
4 tbsp butter, melted
1/2 cup sugar
1 egg
1 tsp vanilla
2 1/2 cups flour
zest from 1/2 a small lemon
cinnamon

Directions:
Preheat the oven to 350 degrees
Combine first four ingredients
Stir in flour and lemon zest
With your hands, roll dough into small balls
Roll in cinnamon (I pour a tablespoon at a time onto a small plate)
Bake on greased baking sheet 10-15 minutes
(cookies will be slightly gooey, but will harden while they cool)
