The last of my weekend baking adventures. These are incredibly healthy but also - fair warning - incredibly addictive, with a deep, orange flavor brought out by a splash of orange liqueur and a crisp, crunchy texture ensured by three separate rounds of baking. Perfect for afternoon tea or coffee. For a little bit of interest, add dried cherries or (even better, I think) dried dates. Delicious.
Ingredients:
2 1/2 cups flour
2 tsp baking powder
2 tsp dried orange zest
1 1/3 cups sugar
3 eggs
5 tbsp olive oil
2 tbsp orange liqueur
2 tbsp orange juice
Directions:
Preheat oven to 350 degrees
Line a baking sheet with parchment paper / silpat
Combine flour, baking powder, orange zest and sugar in large bowl
In a separate bowl, whisk the eggs, oil, liqueur and juice
Divide dough into two equal portions
Roll out each portion into a log, about 11 inches long and 2 inches wide
Bake 20-25 minutes, or until golden brown
Remove from oven and allow to cool
Slice logs diagonally and arrange biscotti on baking sheet
Bake for 7 minutes, flip, bake for another 7 minutes
Remove from oven and cool (will crisp up as they cool)
40 biscotti
Add wet ingredients to dry and stir until just combined
