Tofu Chocolate Mousse

Ever get stuck with lots of left-over tofu and wonder what to do with it? Rather than force-feed everyone you know tofu stir-fry and tofu steaks for the next week, try this: blend it up with some cocoa powder, honey and milk, and - ta dah! - an easy, incredibly healthy and surprisingly delicious chocolate mousse. It's only 75 calories/serving, and packed with protein. The longer you let it chill, the thicker it will become - after two to three hours, it's morphed into a rich and creamy mousse. Topped with a dollop of whipped cream and sprinkled with a few walnuts, it's a seriously satisfying dessert. Enjoy!


Ingredients:
7 oz. silken tofu (I used mori-nu lite)
2 tbsp unsweetened cocoa powder
2 tsp honey (if you want it sweeter, try a tbsp)
1/4 cup milk (I used trader joe's almond milk)


Directions:
Blend the tofu until smooth
Add in the other ingredients, and again blend until smooth
Pour into a serving dish or two separate ramekins (it'll chill faster this way),
cover with saran wrap and chill in the fridge for at least 2 hours

2 servings, approximately 75 calories/serving

*for something a little richer, blend in a handful or two of melted dark chocolate
